Crunchy puris for Gupchup/Puchka/Golgappa





These are the basic puffed crunchy Puris we need for the Golgappas and verity of Puchka chats.
For making this we'll need

1/2 cup all purpose flour
1/2 cup fine semolina
about 1/4 cup of water
Oil for frying



Combine flour and semolina in a bowl and knead it using a little water. Sprinkle in more water (as needed) to form a medium hard dough. Knead the dough for about 10 minutes. Then set it aside for at least 30 minutes covered with wet towel. After the resting time get the dough to the kitchen counter(or any flat surface, to make it easier to knead) and knead it for another 10 minutes. Keep it covered with wet towel through out the preparation to keep it from drying.



Take a small portion and using a rolling-pin roll it into a big sheet. Then use the cookie cutter to cut out circle shapes from the rolled sheet. Roll out the circles again to make them a little thinner. And cover them with wet towels till they're ready to fry. Fry them on a medium hot oil till golden and crisp. 
If the Puris doesn't seem crisp enough then bake them in the oven for about 20 minutes in 200°F.
